  1. 2004 Louis Jadot Puligny-Montrachet 13.5%

This chardonnay brings notes of burnt coffee, oak, vanilla and apple to the nose, and on the palate offers notes of toasted nuts, vanilla, spice and caramel, with medium acidity.

I would pair this with a butter poached lobster with a butterscotch reduction and toasted almonds.

  2. 2004 Chablis
This chablis has a pale gold color to it. It alsoT has a great minerality to it on the nose and on the palate. You also get citrus, floral, and spice. These note are also on the palate. The acidity of this wine is medium with a light body. This wine is dry and refreshingly short. This would pair nicely with a maryland crab cake with a lemon butter sauce.

  3. 2005 Chateau Carbonnieux Pessac-Leognan

Chateau Carbonnieux is from Pesssac-Leognan within Bordeaux, France. This white wine is made from a classic blend of Sauvignon Blanc and Semillon grapes. The aromas and tastes notes are an excellent combination of oak, toast, pear, bitter orange zest, and also undertones of distilled spirit “cognac”. This dry wine has high acidity and could pair well with a roasted chicken accompanied by root vegetables.

  4. 2007 Domaine Entrefaux Crozes-Hermitage 12.5%
Domaine Entrefaux Crozes-Hermitage 2007 is a very deep ruby red wine. On the nose there is an abundance of earthy notes such as oak, smoke, tobacco, and leather. There is also some berry fruit such as cherry. This wine is dry with light to medium body. There is crisp acid and low tannins. On the palate there is spice, pepper, tobacco, and un-ripe red cherries. This wine would be excellent with a roasted rack of lamb.
